Shiitake Chicken Soup

Shiitake Chicken Soup
Serves 4
Ingredients
Dried shiitake mushrooms to taste
Half a chicken (preferably bone-in parts like thighs and wings)
1 whole head of garlic, peeled
Water, enough to cover the chicken
Salt, to taste
Time: 45 minutes (stovetop or rice cooker method)
Instructions
Prep the ingredients: Peel the garlic cloves. Rinse the dried shiitake mushrooms and soak them briefly in water to soften.
In a large pot (or rice cooker), add the chicken, soaked mushrooms, and garlic. Pour in enough water to fully cover the chicken. Cover with a lid and bring to a boil. (If using a rice cooker, cook for about 40 minutes.)
Stovetop method (layered simmering): After the soup first comes to a boil, turn off the heat and let it sit with the lid on to continue slow-steeping. After 30 minutes, bring it back to a boil, then turn it off again. Repeat this cycle a total of three times.
On the final reheat — ideally just before serving — add salt to taste. Once lightly seasoned, it's ready to enjoy!
