Black and White Panna Cotta

Black and White Panna Cotta
6 servings
Ingredients:
10g gelatin sheets
30g white sugar
200g heavy cream
450g fresh milk
Oreo cookies, as needed
Black Wood Ear Filling:
200g black wood ear mushrooms
Honey, as needed
Time: 30 minutes
Steps:
Clean and dry the black wood ear mushrooms, then blend them into a fine paste. Cook the paste with honey (and optional malt syrup or sugar) for about 15 minutes, until thickened. Set aside to cool.
Soak the gelatin sheets in water and set aside.
Spread the cooled black wood ear paste into the bottom of containers as the filling.
In a pan, mix fresh milk and heavy cream, and heat over low until warm but not boiling. Stir in the softened gelatin sheets, heating to about 80°C before removing from heat.
Pour the mixture into containers and allow to cool, then refrigerate until set.
Before serving, top with crushed Oreo cookies for decoration. Your black-and-white Valentine’s Day dessert is ready!
