Kung Pao Fried Mushrooms

Kung Pao Fried Mushrooms
Serves 4
Ingredients
Yellow oyster mushrooms (coral mushrooms), to taste
1/4 cup dried chili peppers
1 teaspoon Sichuan peppercorns
Cornstarch and all-purpose flour (for coating)
Oil for frying
Tomato ketchup
Vegetarian oyster sauce
A little rice vinegar
Sugar
Time: 20 minutes
Instructions
Rinse the yellow oyster mushrooms (coral mushrooms), and while they are still a little damp, lightly coat them with cornstarch and all-purpose flour.
Heat oil to 160°C (320°F) and fry the coated mushrooms. When they float to the surface and turn golden with a slight brown color, remove them from the oil.
In a separate hot pan, add oil and sauté the dried chili peppers and Sichuan peppercorns until fragrant. Then, add tomato ketchup, vegetarian oyster sauce, a little rice vinegar, and sugar to the pan.
Add the fried mushrooms to the pan and toss them in the sauce and spices, allowing the flavors to mix. Once well-coated, remove from the pan and serve.
