Home-style Mushroom Dish: Pan-fried Shiitake Mushrooms Stuffed with Ground Meat

Ingredients:
Puli shiitake mushrooms (appropriate amount)
Ground pork (1 pack)
1 onion
Minced garlic (appropriate amount)
A small amount of green onions
A little olive oil
Seasoning for ground meat:
Black pepper (appropriate amount)
Soy sauce (appropriate amount)
Salt (appropriate amount)
Rice wine (appropriate amount)
Sesame oil (appropriate amount)
1 egg white
A little cornstarch
Sweet sauce ingredients:
Sweet soy sauce (appropriate amount)
White vinegar (appropriate amount)
Sugar (appropriate amount)
Time: 15 minutes
Instructions:
Dice the onion and sauté in a hot pan with a bit of salt and black pepper until fragrant. Set aside to cool.
In a mixing bowl, massage the ground pork by hand. Once the onion has cooled slightly, mix it into the pork along with a splash of water, rice wine, sesame oil, and egg white. If the mixture feels too wet, add a bit of cornstarch to help it bind.
Rinse the shiitake mushrooms quickly and remove the stems. Lightly brush the insides with a cornstarch slurry.
Scoop the meat filling into the mushrooms and press gently to secure.
Heat a frying pan with a bit of olive oil or pork lard. Cook the stuffed mushrooms over medium heat until both sides are nicely seared.
Flip carefully and cook through — the meat should be fully white inside when sliced.
Plate and garnish with chopped onion and scallion. Serve with a sweet vinegar dipping sauce.
