Mushroom Omelette
(Serves 2)
Ingredients
Blue oyster mushrooms (or any mushrooms you like), a handful
3 eggs
Fresh parsley, chopped
Salt, to taste
Unsalted butter (optional)
Olive oil, for cooking
Prep Time: 15 minutes
Instructions
Clean and dry the mushrooms. Sauté them in a dry skillet over medium heat — no oil needed. Optional: Add a bit of butter for extra flavor.
Add chopped parsley to the pan and cook with the mushrooms until fragrant.
Crack the eggs into a bowl and whisk until bubbly and frothy — this helps make the omelette light and fluffy.
Heat a little olive oil in a nonstick pan. Pour in the eggs and cook over low heat. Cover for about 30 seconds, then check if the top is set.
Slice the omelette in half before serving. Enjoy!
