Italian-Inspired Appetizer: Tomato Basil Mushroom Bruschetta
Serves 3
Ingredients
Snow white mushrooms (or any mild white mushroom), chopped
1/4 onion, finely diced
A few fresh basil leaves
1 ripe beefsteak tomato
French baguette, sliced
2 slices unsalted butter
Olive oil, to taste
Time: 15 minutes
Instructions
Score a small “X” on the bottom of the tomato and place it in boiling water for 1 minute. Remove and peel off the skin easily. Dice the tomato and set aside.
Finely chop the fresh basil leaves. If you don’t grow your own, you can find them at most markets.
In a bowl, mix the diced tomato and chopped basil with a drizzle of olive oil to make a fresh tomato-basil topping.
In a hot pan, melt the unsalted butter and sauté the diced onion until fragrant. Add the chopped, cleaned mushrooms and stir-fry briefly until cooked (they cook quickly!).
