Black Wood Ear Sweet Soup

Ingredients:
20g Agar-agar
200g Black Wood Ear
60g Maltose
120g Sugar
60g Honey


Time: 45 minutes

Steps:
Clean the Black Wood Ear and remove any dirt, then drain thoroughly.
Blend the Black Wood Ear into small pieces.
In a pot, combine honey, maltose, sugar, and the Black Wood Ear. Cook on low heat while stirring in a figure-8 motion to prevent burning.
Soak the agar-agar in a little water and add it to the mixture. Continue stirring to dissolve.
Once the mixture reaches 80°C, remove from heat. Pour it into a suitable tray and let it cool before refrigerating to set.
After 15 minutes, remove the sweet soup from the fridge and cut into small pieces. Enjoy!
